Since the food thread seems in danger of dying out and since it is summertime and many of you have gardens, and since I can't get enough of taxonomic debates about pesto - here's a recipe for sun-dried tomato pesto.

3 ounces Sun-dried tomatoes
3 ounces fresh tomatoes: peeled, chopped and seeded
1 tsp minced garlic
6 ounces Olive oil
15 fresh basil leaves
1 tbs pine nuts
1 tbs balsamic vinegar
1/4 cup parmesan cheese
salt and pepper

In blender, combine sun-dried tomatoes, tomatoes, garlic and olive oil. At medium speed, puree till smooth. With machine running, add basil, pine nuts, and balsamic vinegar. Pour into bowl; Fold in parmesan cheese, then season with salt and pepper. Serves 4. Enjoy!!! Goes nice on a pizza crust with fresh mozzarella too.
